Sometimes, all you really need is a cookie that’s warm, soft, and comforting — one that’s perfect with a glass of milk and feels like a deep breath after a long day. These Spiced Sugar Cookies are exactly that. They’re pillow-soft in the center, kissed with cinnamon, cardamom, and ginger, and just the right balance of sweet and spice. It's the perfect little bite of comfort, but with an unexpected, unconventional aromatic twist.
What You’ll Need-
3 sticks (1.5 cups) unsalted butter, softened
1.5 cups sugar, plus extra for rolling
3 large eggs
4.5 cups all-purpose flour
1 tsp baking soda
2 tsp cream of tartar
2 tsp salt
For the Sugar Topping:
2 tbsp crushed cardamom seeds
1 tbsp ground cinnamon
1 tsp ground ginger
½ cup sugar
How to Make It
Cream the Butter and Sugar.
Start by creaming together the softened butter and sugar until it’s light and fluffy. You want this mixture to feel airy and almost cloud-like. Once that’s done, add in the eggs and vanilla extract. Mix until fully combined and smooth.Combine the Dry Ingredients.
In a separate bowl, whisk together the flour, baking soda, cream of tartar, and salt. You’ll want this dry mix to be fully incorporated before adding it to the butter-sugar mixture. This step ensures a consistent dough.Mix it All Together.
Gradually add the dry ingredients to the wet, one cup at a time. The key here is to avoid overmixing — we want these cookies to stay soft and tender. Just mix until it’s all combined, then stop. A gentle touch goes a long way.Prepare the Sugar Topping.
